Chelsie’s Biography.
Chelsie Miller was born in Goodyear, Arizona and spent the first 20 years of her life there attending dance classes and doing gymnastics. Upon graduating from high school, she attended Northern Arizona University, studying dental hygiene. Money became a major obstacle during this time which ultimately led to her joining the military.
During the earlier years of her six-year enlistment, Chelsie continued taking classes at various military-affiliated colleges that allowed her to improve her grade point average and find a new degree program she was more passionate about. Her day-to-day interactions and learning more about the benefits of a plant-based diet guided her curiosity towards understanding human nutrition. This prompted her enrollment at Arizona State University where she was introduced to a nutrition-focused curriculum through the lens of communication. After a short time, she realized that an online degree program in nutrition communication was not the direction she wanted to go. Chelsie searched for a true dietetic program offered in person that she could attend once her enlistment was completed. This led her to her current path.
Upon separating from the military in late 2019, Chelsie enrolled at San Diego State University (SDSU) where she is working towards a degree in nutrition through the Didactic Program in Dietetics. In addition to her undergraduate studies, she has also become a research assistant in both the biochemistry and nutrition labs on campus, working under the guidance of her mentors Dr. Christal Sohl and Dr. Shirin Hooshmand. The skills she is learning will help prepare her for a PhD program in Nutritional Biochemistry, where she plans to blend her passion for both fields of study to hopefully teach her own students one day.
In her second to last year as an undergraduate student, Chelsie was elected President of the Student Nutrition Organization. She was selected by her peers and previous board members of the organization. Additionally, she is a scholar in the Initiative for Maximizing Student Development program where she is able to expand her undergraduate research experience.
When Chelsie is not at school, she is either teaching yoga or running on the local trails. She also loves quality time at the beach with her husband and greyhound, Demme. Her immediate goals are to graduate from SDSU and apply for a PhD program, where she will utilize her critical thinking skills and satisfy her eagerness to learn.
